Potato Egg Curry

I took a short break from blogging. Eventhough I was not posting anything, I still was cooking and taking pictures. I usually make egg curry with potaoes in it so that I can use it for more than one day. Potatoes and eggs get along well in this versatile egg curry. To fried onion, garlic and ginger, add masala powders and saute for few minutes. Then add potatoes and tomatoes and cook till tender. Stir in boiled eggs and home made garam masala towards the end. It could be served with chapathi, appam, puttu or idiyappam.

Capsicum Egg Bhurji (Scrambled Eggs with Bell Pepper)

Egg bhurji is the scrambled egg preparation from North India. Here egg bhurji is made more nutritional and colorful by adding capsicum. Onion, green chilli and capsicum are stir-fried and then beaten eggs and milk is added. Milk is used in the recipe to make bhurji softer. Serve with rice or roti.

This Kerala style egg roast is one of my favorites where hard boiled eggs is served along with a roasted onion-spices gravy. It could be served as a side dish with appam, roti or any other kind of Indian bread.

Malabar Style Stuffed Chicken / Cornish Hen for Thanksgiving (Kozhi Nirachathu)

 
Hope you all had a great thanksgiving day! I found this twin pack of two small cornish hen at the grocery store and decided to go chicken instead of turkey this time for a Kerala style thanksgiving. Malabar is a coastal region of Southern India which forms the northern part of Kerala. It is in the Calicut district (now Kozhikode) of Malabar that Vasco da Gama once landed in his quest for spices, opening up a new spice trade route to India (rest is history!). It is fascinating to think that the same region was Christopher Columbus' original destination when he accidently discovered the Americas (and rest is history!). Oh yeah, I'm getting addicted to Wikipedia these days. :) Anyways, coming back to Malabar cuisine, the region has its own style of a rich culinary tradition. This stuffed chicken is one of their specialties where chicken is stuffed with hard boiled eggs and roasted onion masala. This was my first attempt and it was indeed a culinary delight.

Capsicum / Bell Pepper Egg Curry


My son loves egg and I'm looking for egg recipes these days. Whenever I make egg curry he gets the egg and I get the gravy. Adding bell pepper gives a nice flavor to the curry. I made slight variations to the recipe, adding chilli and coriander powders and reduced the amount of cumin powder.

Cauliflower Egg Thoran / Stir-Fry with Coconut


I usually make this thoran for my son who is a very picky eater. The recipe is very simple, first make cauliflower thoran and then add egg. There is an easy cauliflower thoran recipe in Yummy Team's blog. After making the thoran, move the cauliflower to the sides of the pan. Crack eggs (1 egg for 1 cup cauliflower) into the empty space in the middle of the pan. Add salt and black pepper just enough for the eggs. Stir the eggs gently with a spatula as they begin to cook. Cut any large chunks of egg into the size of cauliflower florets. After the eggs solidifies, mix them with the cauliflower and stir-fry further for 2-3 minutes. This stir-fry tastes really good even without the coconut in it.
