A snow storm is no longer a big event here as it is happening more often these days. Meteorologists seem to be the only people excited about it as this winter is very close to getting into record books. I tried to keep myself happy in this chilly wintry weather by making this cauliflower korma. This delicious korma is prepared by cooking cauliflower in a coconut-cashew gravy along with other spices. This goes well with both rice and roti.

Shrimp Korma (Prawn in Creamy Gravy)

Konkani Ivy Gourd Cashew Nut Stir-fry (Tendli Bibbe Upkari)
Tendli Bibbe Upkari is a popular Konkani side dish served with rice for special occasions like weddings, pujas etc. Traditionally tender cashew nuts are used for the dish. Since tender cashew nuts are not available, I used cashew nuts soaked in warm water as explained in the recipe. I loved it. I'm sure tender cashew nuts must be giving a different flavor to this dish.

Capsicum Kairas / Bell Pepper Potato n Peanuts with Fried Coconut
This is a Konkani side dish popular in Northern Karnataka. Capsicum, potato and peanuts are cooked with tamarind and jaggery along with freshly roasted masala. I used only very little jaggery not wanting to make it too sweet. It tasted similar to the Kerala theeyal because of the fried coconut factor.

Shahi Paneer ('Royal' Paneer in Cashewnut gravy)
ON VACATION!!!
In this creamy side dish for chapathi, roti etc., fried paneer is cooked in cashewnut and tomato gravy. Cream or whole milk could be added towards the end for more creaminess. Mattar Paneer (Paneer with Peas in Tomato Gravy)
The recipe that I used here is more like that of a restaurant style mattar (peas) paneer, where paneer and peas are cooked in a thick creamy gravy of tomatoes and spices and then flavored with a pinch kasoori methi (dried fenugreek leaves) towards the end. Native to Punjab, mattar paneer is a North Indian delicacy usually served with roti, naan or chapathi. Paneer is a fresh (not aged) Indian cheese made by curdling warm milk with lime juice or other acidic coagulating agents.
