Potato Egg Curry

I took a short break from blogging. Eventhough I was not posting anything, I still was cooking and taking pictures. I usually make egg curry with potaoes in it so that I can use it for more than one day. Potatoes and eggs get along well in this versatile egg curry. To fried onion, garlic and ginger, add masala powders and saute for few minutes. Then add potatoes and tomatoes and cook till tender. Stir in boiled eggs and home made garam masala towards the end. It could be served with chapathi, appam, puttu or idiyappam.

Palak / Saag Chicken (Chicken in Spinach Gravy)

Going green on St. Patrick's Day! Yesterday we had chapathi and palak chicken for dinner. I didn't make it with St. Paddy's day in mind; it just happened that way. My son came to the conclusion that he had 'green water' and 'green cupcake' at school, so we are having 'green chicken' for dinner. For the gravy, spinach leaves are immersed in boiling water for a few minutes, then immersed in cold water to retain its color and then pureed in a blender. Marinated chicken is cooked with onion, garlic, ginger, green chilli, tomatoes and other spices and then mixed with the spinach gravy. Kasoori methi and butter or cream could be added towards the end to get the restaurant taste.

Gujarati Kadhi (Yogurt Chickpea Flour Gravy)

Kadhi is a North Indian delicacy and there are regional variations in recipe. I loved this side dish from Gujarat. It is made by simmering yogurt and chickpea flour (besan or gram flour) along with other spices and jaggery. I reduced the amount of jaggery not wanting to make it too sweet. Traditionally, this kadhi is served with khichdi but it could also be served with plain rice or pulav.

Green Swiss Chard and Azuki Beans (Red Chori) Curry

I'm in love with swiss chard now which tastes very similar to amaranth. This time I bought the green swiss chard. It makes a good combination with azuki beans and the side dish could be served with rice or roti.

Fish Curry in Tamarind Gravy (Andhra Chepala Pulusu)

There are innumerable ways for making fish curry. This is Andhra style fish curry where fish is cooked in tamarind gravy. This is somewhat similar to Kerala fish curry where gambooge (Malabar tamarind or kudampuli) is used as souring agent. If your taste buds are senstive enough you could feel the taste difference between the two curries.

Creamy Tomato Curry

This is a very simple curry which calls for the addition of milk towards the end to make it creamy. It could be served as a side dish with rice or roti. I served it with idli and dosa too.

Capsicum / Bell Pepper Egg Curry

My son loves egg and I'm looking for egg recipes these days. Whenever I make egg curry he gets the egg and I get the gravy. Adding bell pepper gives a nice flavor to the curry. I made slight variations to the recipe, adding chilli and coriander powders and reduced the amount of cumin powder.

Kerala Red Fish Curry (Kottayam Style)

I was searching for a fish curry recipe and stumbled upon this recipe by the Yummy Team. Kottayam, "the city of letters", is located in central Kerala. This is a typical Kerala fish curry recipe which does not use coconut or coconut milk. The only difference I made here are that I used shallots along with ginger-garlic and also added green chilli to spice it up. Thanks to Yummy Team for the recipe.

This is another red fish curry with salmon. This time I added coriander powder.
