In this healthier version of macaroni and cheese part of cheddar cheese is replaced with tomato sauce. My son loves this version better because he loves to have tomato sauce in his pasta.

Chettinad Onion Tomato Chutney
This awesome onion tomato chutney from Chettinad is served with idli or dosa. Onion and tomatoes are stir-fried along with other spices and then pureed into fine paste with coconut milk. It is spicy, sour and sweet at the same time.

Paneer Butter Masala (Paneer Makhani / Paneer Makhanwala)
This is a delicious paneer dish where paneer is cooked in a tomato-butter-cream gravy. I assume paneer butter masala, makhani and makhanwala are all the same dish. The word 'makhan' means butter or cream. Note that butter is made from cream of milk (raw, pasteurized or fermented). Whatever the name is, the dish goes well with any Indian bread. I used store bought low fat paneer this time and it started breaking up while cooking :(

Bihari Aloo Dum (Baby Potato in Yogurt n Masala Gravy)
Dum Aloo is popular dish in North India with regional variations in preparation. This time I tried the Bihari version. Here cooked baby potatoes are skinned and fried in oil/ghee and then cooked in a tomato-yogurt gravy along with spices. This could be served as side dish rice or roti.

Shahi Paneer ('Royal' Paneer in Cashewnut gravy)
ON VACATION!!!
In this creamy side dish for chapathi, roti etc., fried paneer is cooked in cashewnut and tomato gravy. Cream or whole milk could be added towards the end for more creaminess. Mattar Paneer (Paneer with Peas in Tomato Gravy)
The recipe that I used here is more like that of a restaurant style mattar (peas) paneer, where paneer and peas are cooked in a thick creamy gravy of tomatoes and spices and then flavored with a pinch kasoori methi (dried fenugreek leaves) towards the end. Native to Punjab, mattar paneer is a North Indian delicacy usually served with roti, naan or chapathi. Paneer is a fresh (not aged) Indian cheese made by curdling warm milk with lime juice or other acidic coagulating agents.

Thakkali Sadam (Tomato Rice)
Tomato rice is a South Indian delicacy, usually served with pickles or raita. As the name suggests, it is rice flavored with tomatoes and freshly roasted and ground lentils. This is the first time I'm making thakkali sadam and loved it.

I have to admit I couldn't help using cloves, cardamom, Malabar leaves (Indian bay leaves), peppercorns and cinnamon stick for flavor as suggested in Varsha's Will-O'-the Wisp. I love the aroma of those spices that spreads into the room while cooking with them.
